Ingredients

  • 2 tablespoons olive oil

  • 1 tablespoon minced garlic

  • 1 large yellow onion

  • 1 tablespoon dried basil

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 teaspoon sugar

  • 2 cups chicken broth

  • 2 28oz cans whole peeled tomatoes

  • 1 cup heavy cream

  • shaved parmesan (for topping)

Directions

  • Heat the olive oil in a large pot over medium heat. Add the garlic, onion, dried basil, salt, pepper, and sugar. Cook, stirring occasionally, for about 2-3 minutes, or until the onion is translucent.
  • Add the chicken broth and canned tomatoes and bring to a boil. Turn down the heat and allow to simmer uncovered for about 10 minutes.
  • Use an immersion blender to blend the soup until smooth.
  • Finally, mix in the heavy cream.
  • Ladle the soup into bowls and top with shaved parmesan.

Notes

  • Feel free to add in the salt, pepper, & sugar to taste.
