Tomato Basil Soup
My easy, 30-minute tomato basil soup is creamy & comforting- perfect for pairing with a grilled cheese sandwich.

Ingredients
2 tablespoons olive oil
1 tablespoon minced garlic
1 large yellow onion
1 tablespoon dried basil
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sugar
2 cups chicken broth
2 28oz cans whole peeled tomatoes
1 cup heavy cream
shaved parmesan (for topping)
Directions
- Heat the olive oil in a large pot over medium heat. Add the garlic, onion, dried basil, salt, pepper, and sugar. Cook, stirring occasionally, for about 2-3 minutes, or until the onion is translucent.
- Add the chicken broth and canned tomatoes and bring to a boil. Turn down the heat and allow to simmer uncovered for about 10 minutes.
- Use an immersion blender to blend the soup until smooth.
- Finally, mix in the heavy cream.
- Ladle the soup into bowls and top with shaved parmesan.
Notes
- Feel free to add in the salt, pepper, & sugar to taste.
