Notes

  • Ever wonder why the first batch of pancakes doesn’t come out as good as the rest? This is typically due to putting the batter in the pan too early. You want to be sure to get the pan hot before starting. I also found that using a nonstick pan without butter or oil yielded the best results.

Ingredients

  • Wet Ingredients
  • 2 1/2 cups 2 1/2 Buttermilk

  • 2 2 Eggs

  • 1 teaspoon 1 vanilla

  • 4 tablespoons 4 unsalted butter (melted & cooled)

  • Dry Ingredients
  • 2 cups 2 flour

  • 2 tablespoons 2 sugar

  • 1 teaspoon 1 baking powder

  • 1 teaspoon 1 baking soda

  • 1/2 teaspoon 1/2 salt

Directions

  • Start by preheating a large nonstick pan over medium-low heat.
  • Whisk together the wet ingredients in a large bowl until well combined.
  • In a separate bowl, whisk together the dry ingredients.
  • Add the dry ingredients to the wet ingredients and whisk until just combined. Do not overmix.
  • Use an ice cream scoop to add the batter to the pan. The batter should be cooked until bubbles form on the surface, indicating it’s time to flip them over. After flipping, cook for another minute or two until golden brown on both sides.
  • Enjoy immediately and top with butter and maple syrup, if desired.

Notes

  • Overall cooking time will vary depending on the size of your pan and how many pancakes you are able to cook at one time.

This Hot French Onion Dip is inspired by the classic french onion soup. It’s filled with carmelized onions and gruyère cheese.

INGREDIENTS

  • 8oz cream cheese, softened
  • 1 cup sour cream
  • 2 medium sweet onions, roughly chopped
  • 1/4 teaspoon sugar
  • 1 tablespoon minced garlic
  • 1 1/2 cups shredded gruyère cheese
  • 1/2 cup shredded parmesan cheese
  • Salt & pepper, to taste
  • (Optional) Crackers or French bread, for serving

HOW TO MAKE HOT FRENCH ONION DIP

Carmelize the onions

  1. Coat a pan with olive oil and heat over medium heat. Once the oil is hot, add in the onions. Let cook and stir every few minutes. After about 10 minutes, add in the sugar. This will help with the caramelization process. Add a splash of water if needed to prevent the onions from drying out. After about 20-30 minutes, the onions should be a rich brown color (as shown above).

Assemble the dip

  1. Preheat the oven to 375F.
  2. Combine the cream cheese, sour cream, carmelized onions, garlic, 1 cup gruyère cheese, and salt and pepper to taste.
  3. Spread the mixture evenly in an 8×8 baking dish. Top with the parmesan cheese and remaining gruyère cheese.
  4. Bake for 15 minutes, then broil for a few minutes until the cheese is browned and bubbly.
  5. Serve with crackers or French bread.

INGREDIENTS

  • 12oz marshmallows
  • 1 teaspoon vanilla
  • 1-2 teaspoons pumpkin pie spice (to taste)
  • 6 cups Rice Krispies cereal

HOW TO MAKE PUMPKIN SPICE RICE KRISPIE TREATS

  1. Prepare a 9×13 dish with butter or cooking spray.
  2. In a large pot over low heat, melt the butter. Add the marshmallows and stir constantly until the mixture is smooth.
  3. Remove from the heat and stir in the vanilla and pumpkin pie spice. Finally, add in the Rice Krispies cereal and mix until evenly coated.
  4. Pour the mixture into the 9×13 dish and use wax paper to press it evenly in the pan.
  5. Place in the refrigerator for about 10 minutes to set.
  6. Remove the rice krispies from the pan and place on a cutting board. Cut into bars as desired.
