Notes

  • A candy thermometer is required for this recipe. Temperature is key to making sure the brittle isn’t too hard or too chewy once set.
  • Baking soda is added at the end of the cooking process to aerate the brittle and give it a lighter texture. Without the baking soda, the brittle would be much harder to bite into.

Ingredients

  • 2 cups 2 sugar

  • 1 cup 1 light corn syrup

  • 1/2 cup 1/2 water

  • 1/2 cup 1/2 unsalted butter, cubed

  • 2 cups 2 salted dry roasted peanuts

  • 1 teaspoon 1 baking soda

  • 2 teaspoons 2 vanilla

Directions

  • Grease a large baking sheet with butter. Make sure to have all ingredients measured out and ready to go before starting this recipe.
  • In a medium saucepan, combine the sugar, corn syrup, and water. Place over medium heat and bring to a boil, stirring occasionally.
  • Once the mixture reaches 250°F, add the butter and stir constantly until melted.
  • Once the mixture reaches 280°F, stir in the peanuts. Continue to stir until the mixture reaches 305°F.
  • Remove the pan from the heat and stir in the baking soda and vanilla. Once fully combined, transfer the mixture to the baking sheet and quickly spread it out.
  • Let cool for about 1 hour before breaking the brittle into pieces. Servings will vary depending on how small you decide to make the pieces.

Notes

  • Store at room temperature for up to 2 months.
