Oatmeal Lace Cookies

Ingredients

  • 1/2 cup unsalted butter

  • 1 cup brown sugar

  • 1 cup old fashioned oats

  • 2 tablespoons flour

  • 1 egg

  • 1/2 teaspoon vanilla

  • pinch of salt

Directions


  • Preheat the oven to 350F and line 2 baking sheets with parchment paper.
  • In a medium saucepan, melt the butter and brown sugar over medium heat until smooth. Remove from the heat and allow to cool for 10 minutes.
  • Mix in the remaining ingredients until well combined.
  • Spoon teaspoons of the mixture onto the baking sheets, leaving about 3 inches of space in between each one. This is important as these cookies will spread a lot!
  • Bake for 5-6 minutes, or until the edges begin to brown.
  • Remove from the oven and let the cookies cool on the baking sheets until set. Then, place on a cooling rack to cool completely and crisp up.
