Ingredients

  • Lemon Loaf
  • 2 tablespoons lemon zest (from 2 large lemons)

  • 1 cup sugar

  • 2 tablespoons lemon juice (from 1 large lemon)

  • 1 cup vegetable oil

  • 1 cup sour cream

  • 3 eggs

  • 1 teaspoon vanilla

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1⁄2 teaspoon salt

  • Lemon Icing
  • 2 cups powdered sugar

  • 3 tablespoons heavy cream

  • 2 teaspoons lemon juice (from about 1/2 of a large lemon)

Directions

  • Lemon Loaf
  • Preheat the oven to 350F and butter & flour a loaf pan.
  • In a large bowl, add the lemon zest and sugar. Use your hands to rub them together- this will release the oils in the lemon zest and add more lemon flavor.
  • Add in the lemon juice, vegetable oil, sour cream, eggs, & vanilla. Whisk together until smooth.
  • Next, add in the flour, baking powder, & salt. Whisk again until smooth.
  • Pour the batter into the prepared loaf pan and bake for about 1 hour and 5 minutes. A toothpick should come out with just a few crumbs when inserted into the center of the loaf.
  • Allow to cool in the pan for about 10 minutes, then carefully remove from the pan and place on a cooling rack to cool completely.
  • Lemon Icing
  • Whisk together the powdered sugar, heavy cream, and lemon juice until smooth.
  • Spread evenly over the cooled lemon loaf.
  • Allow the icing to set, then slice & enjoy!
