Ingredients
- Lemon Loaf
2 tablespoons lemon zest (from 2 large lemons)
1 cup sugar
2 tablespoons lemon juice (from 1 large lemon)
1 cup vegetable oil
1 cup sour cream
3 eggs
1 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons baking powder
1⁄2 teaspoon salt
- Lemon Icing
2 cups powdered sugar
3 tablespoons heavy cream
2 teaspoons lemon juice (from about 1/2 of a large lemon)
Directions
- Lemon Loaf
- Preheat the oven to 350F and butter & flour a loaf pan.
- In a large bowl, add the lemon zest and sugar. Use your hands to rub them together- this will release the oils in the lemon zest and add more lemon flavor.
- Add in the lemon juice, vegetable oil, sour cream, eggs, & vanilla. Whisk together until smooth.
- Next, add in the flour, baking powder, & salt. Whisk again until smooth.
- Pour the batter into the prepared loaf pan and bake for about 1 hour and 5 minutes. A toothpick should come out with just a few crumbs when inserted into the center of the loaf.
- Allow to cool in the pan for about 10 minutes, then carefully remove from the pan and place on a cooling rack to cool completely.
- Lemon Icing
- Whisk together the powdered sugar, heavy cream, and lemon juice until smooth.
- Spread evenly over the cooled lemon loaf.
- Allow the icing to set, then slice & enjoy!
