Butternut Squash Pasta perfectly combines a velvety sauce made from blended butternut squash with your favorite pasta. This is a delicious, easy recipe that can be made in just 30 minutes.

Ingredients

  • 10oz butternut squash – to keep this recipe quick and easy, I used a bag of frozen cubed butternut squash. I microwaved it for 5 minutes in the bag, and it was ready to be used for the sauce.
  • 1/2 yellow onion, roughly chopped
  • 2 tsp minced garlic
  • 1 tsp each of dried rosemary and thyme – I used dried herbs to keep this recipe simple, but if you want to use fresh herbs, use 1 tbsp of each.
  • 1 cup gouda cheese, shredded
  • salt & pepper – to taste
  • 2 tbsp butter – I used unsalted butter, but you can use salted butter and reduce the added salt to taste.
  • 1 lb pasta – Homemade pasta was used in the photos, but this recipe is also great with rigatoni. Feel free to use your favorite type of pasta!
  • parmesan shavings – For serving, if desired.

Ingredients

  • 10 oz 10 cubed butternut squash, frozen

  • 1/2 1/2 yellow onion, roughly chopped

  • 2 teaspoons 2 minced garlic

  • 1 teaspoon 1 dried rosemary

  • 1 teaspoon 1 dried thyme

  • 1 cup 1 gouda, shredded

  • salt & pepper, to taste

  • 2 tablespoons 2 butter

  • 1 pound 1 pasta of choice

  • parmesan shavings, for serving

Directions

  • Microwave the squash until tender. Set aside to cool.
  • Cook your desired pasta and set aside.
  • Heat a drizzle of olive oil in a large skillet over medium heat. Add in the onion and cook until translucent, stirring occasionally. Then add in the garlic and herbs and cook until fragrant, 1-2 minutes.
  • Add the squash and onion mixture to a blender or food processor and blend until smooth.
  • Return the mixture to the skillet over medium-low heat. Whisk in the butter and cheese until melted and smooth. Add in salt and pepper to taste.
  • Add the cooked pasta to the sauce and toss to coat. Serve topped with parmesan shavings if desired.
