Easy Butternut Squash Pasta

Butternut Squash Pasta perfectly combines a velvety sauce made from blended butternut squash with your favorite pasta. This is a delicious, easy recipe that can be made in just 30 minutes.

Ingredients
- 10oz butternut squash – to keep this recipe quick and easy, I used a bag of frozen cubed butternut squash. I microwaved it for 5 minutes in the bag, and it was ready to be used for the sauce.
- 1/2 yellow onion, roughly chopped
- 2 tsp minced garlic
- 1 tsp each of dried rosemary and thyme – I used dried herbs to keep this recipe simple, but if you want to use fresh herbs, use 1 tbsp of each.
- 1 cup gouda cheese, shredded
- salt & pepper – to taste
- 2 tbsp butter – I used unsalted butter, but you can use salted butter and reduce the added salt to taste.
- 1 lb pasta – Homemade pasta was used in the photos, but this recipe is also great with rigatoni. Feel free to use your favorite type of pasta!
- parmesan shavings – For serving, if desired.
