Notes

  • My blondies as pictured are noticeably underbaked. This is how I personally like them! For gooey, underbaked blondies like mine, bake at 350F for 20 minutes. The center will jiggle slightly and will sink in a bit once cooled. For firmer blondies, bake at 350F for 25-30 minutes, or until the edges are golden and the center is set. I will say, the firmer blondies tend to look prettier since the center does not sink in.
  • Cookie butter can be found in most grocery stores near the peanut butter/jelly. Biscoff cookie butter is fairly expensive, so I usually opt for the store brand. I think it’s just as good!

Ingredients

  • Blondie Base
  • 1/2 cup 1/2 unsalted butter, melted

  • 1 cup 1 brown sugar

  • 2 2 eggs

  • 1 teaspoon 1 vanilla

  • 1/2 cup 1/2 cookie butter, melted

  • 1/2 teaspoon 1/2 baking soda

  • 1 teaspoon 1 hot water

  • 1 1/2 cups 1 1/2 flour

  • 1/4 teaspoon 1/4 salt

  • Cookie Butter Drizzle
  • 1/4 cup 1/4 cookie butter, melted

Directions

  • Preheat the oven to 350F and line an 8×8 metal baking pan with parchment paper.
  • Heat the butter in the microwave in 30-second increments until melted. Let the butter cool slightly for about 5 minutes.
  • Using a stand or handheld mixer, whisk together the melted butter and brown sugar until combined.
  • Add the eggs and vanilla and whip on medium/high speed until light and fluffy, about 3-5 minutes.
  • Melt the cookie butter in the microwave for 30 seconds and mix in until well combined.
  • Dissolve the baking soda in the hot water and mix into the batter. Fold in the flour and salt until just combined- do not overmix.
  • Pour the batter into the prepared pan and use a spatula to spread it out evenly. The batter will be thick.
  • For gooey, underbaked blondies like mine, bake at 350F for 20 minutes. The center will jiggle slightly and will sink in a bit once cooled. For firmer blondies, bake at 350F for 25-30 minutes, or until the edges are golden and the center is set.
  • Allow the blondies to cool completely. Melt the cookie butter in the microwave for 30 seconds and drizzle it over the blondies. Allow the cookie butter to set at room temperature or in the refrigerator (if short on time) before slicing into 16 bars.
