Start by preheating a large nonstick pan over medium-low heat.
Pancake Batter
Whisk together the wet ingredients in a large bowl until well combined.
In a separate bowl, whisk together the dry ingredients.
Add the dry ingredients to the wet ingredients and whisk until smooth.
Cinnamon Swirl
Combine the cinnamon swirl ingredients in a small bowl. The mixture should be thick. Transfer into a piping bag and make a small cut at the end.
Use an ice cream scoop to add the batter to the pan. Immediately pipe the cinnamon swirl onto the pancake batter (as shown above). The batter should be cooked until bubbles form on the surface, indicating it’s time to flip them over. Flip carefully and cook for another minute or two until golden brown on both sides.
Enjoy while they’re hot! Top with maple syrup if desired.
