Notes

  • I recommend leaving the buttermilk and butter in the refrigerator until you’re ready to use them so that they stay cold.
  • If you don’t have a food processor, you can also grate the cold butter and use your hands to mix it into the dry ingredients. I prefer to use the food processor because it’s quicker and easier!

Ingredients

  • Biscuits
  • 2 cups 2 flour

  • 1 tablespoon 1 baking powder

  • 1 teaspoon 1 salt

  • 1/2 tablespoon 1/2 sugar

  • 8 tablespoons 8 cold butter, unsalted

  • 1 cup 1 cold buttermilk

  • 1 cup 1 cheddar cheese

  • 1/4 cup 1/4 chives, minced

  • After Baking
  • 2 tablespoons 2 melted butter

  • addtional minced chives as desired for topping

Directions

  • Preheat the oven to 425 F.
  • Add the flour, baking powder, sugar, and salt to a food processor and pulse a few times until combined.
  • Cut the butter into slices and add to the food processor. Pulse several times until the mixture looks like coarse crumbs.
  • Transfer the mixture to a large bowl and use a spatula to mix in the buttermilk until a shaggy dough forms. Do not overmix.
  • Use your hands to fold in the cheddar cheese and chives.
  • Place the dough on a lightly floured surface and fold in half 4 times. Use your hands to flatten the dough to about 1″ thick and use a lightly floured biscuit cutter (or a 3″ round cookie cutter) to cut out the biscuits.
  • Evenly space the biscuits on a baking sheet lined with parchment paper. Bake until the tops are just starting to turn golden brown- this should take anywhere from 12-16 minutes depending on your oven, so I would watch them!
  • After removing from the oven, brush the biscuits with melted butter and top with additional chives. Enjoy immediately while they’re hot and fresh!
