If you like banana bread, you’re guaranteed to love these baked banana donuts with cinnamon glaze! These moist donuts are filled with ripe bananas and are lightly sweetened. As the cinnamon glaze sets, it forms a crackling shell that contrasts with the tender donut beneath.
This recipe is super easy! You can have a batch of fresh donuts whipped up in about 45 minutes.
1 standard nonstick donut pan is needed for this recipe.
Banana donuts:
1/2 cup sugar
1 egg
1 tablespoon milk
1/4 cup vegetable oil
1 teaspoon vanilla
2 medium bananas, mashed
1 cup flour
1 teaspoon baking powder
1 teaspoon cinnamon
Pinch of nutmeg (optional)
1/4 teaspoon salt
Cinnamon glaze:
1/2 cup powdered sugar
1 tablespoon milk
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
Pinch of nutmeg (optional)
HOW TO MAKE BANANA DONUTS WITH CINNAMON GLAZE
Banana donuts:
Preheat the oven to 400F.
In a medium bowl, whisk together the sugar, egg, milk, vegetable oil, and vanilla.
Mash the bananas well with a fork and fold into the mixture.
Mix in the flour, baking powder, cinnamon, nutmeg, and salt until the batter is smooth.
Prepare a donut pan with baking spray and use a piping bag or a measuring cup to pour the batter into the pan.
Bake for 12-14 minutes, or until the donuts are lightly browned and springy to the touch.
Remove from the oven and place the donuts on a cooling rack. Prepare the glaze as they cool.
Cinnamon glaze:
In a bowl that is large enough to dip the donuts into, whisk together the powdered sugar, milk, vanilla, cinnamon, and nutmeg until smooth.
